I guess you could say I am on a bit of an eggnog kick! Ever since I picked up my first carton of the season, my refrigerator has not been empty. Monday, I shared Eggnog Cream Pie Parfaits. This is what started my eggnog dessert obsession.

It continues today with this Ultimate Eggnog Poke Cake. Get this, it starts with an eggnog spice cake, then it’s soaked in eggnog and filled with eggnog pudding. It’s all topped off with a fresh whipped cream and a sprinkle of nutmeg.

At first, I was just going to stop after I soaked the cake in eggnog. But then I was too in love with the eggnog pudding that I made for my cream pie, so I added that too. It was slightly genius.

I have made quite a few poke cake recipes each one different and equally as awesome. There are numerous ways that you can make them work. Some use sweetened condensed milk, some use pudding, you can also use caramel or hot fudge.

These cakes are usually topped with Cool Whip. I choose to use fresh whipped cream whenever possible, I prefer it to the taste of Cool Whip. But as always, you can use Cool Whip too. Finish it off with a sprinkle of nutmeg!

I have spiked this poke cake with some rum, because you all know that I enjoy a little spiked dessert every once in a while. However, you do have the option to omit the rum if you want to serve this to children or whatnot. Wherever this recipe calls for rum, simply substitute it with more eggnog. This is the Ultimate Eggnog Poke Cake after all!

If you are looking for a quick go-to holiday cake, this one should be in your back pocket!

Description

This Ultimate Eggnog Poke Cake is an eggnog spice cake, soaked in eggnog and filled with eggnog pudding. It’s all topped off with whipped cream and a sprinkle of nutmeg.

Ingredients

For the cake:

  • 2 cups(380g) granulated sugar
  • ½ cup(118ml) vegetable oil
  • 3large eggs
  • 1 tablespoon(14.8ml) vanilla extract
  • 2 ½ cups(350 g) all-purpose flour
  • 3 teaspoons(11.2 g) baking powder
  • 1 teaspoon(5 g) salt
  • 1 teaspoon (2.5g) ground nutmeg
  • 1 cup(296 ml) eggnog
  • 1/4 cup (59ml) spiced rum

For the toppings

  • 2 1/2 cups (591ml) eggnog, divided
  • 1 package (3.4oz) instant vanilla pudding
  • ¼ cup (59ml) spiced rum
  • 1 teaspoon (2.5g) ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 1/2 cups (354ml) heavy whipping cream
  • 1/2 cup (65g) powdered sugar

Instructions

  1. Preheatthe ovento 350°F.
  2. Mix the wet ingredients:In a large mixing bowl, beat together the sugar, vegetable oil, eggs and vanilla extract until well incorporated. Scrape down the bowl as needed.
  3. Combine the dry ingredients:In a separate bowl combine the remaining dry ingredients: flour, baking powder and salt. Add half the dry ingredients to the batter, and then add half of the eggnog and mix just until the flour starts to incorporate.
  4. Add the remaining dry ingredients, and the remaining eggnog and rum. Beat on low speed until all of the ingredients are well combined. Stir with a spatula to ensure it’s well mixed.
  5. Pour the batterin a 9-inch by 13-inch pan and bake at 350°F for 28-32 minutes. Test the cake for doneness by inserting a toothpick into the center of the cake. If the toothpick comes out clean, your cake is done. Remove from the oven and allow to cool completely prior to frosting.
  6. Poke the holes: While the cake is still warm, take the end of a wooden spoon or another round object and poke holes all over the top of your cake. Pour 1 cup of eggnog over the cake and allow it to soak in the cake for about 15 minutes.
  7. Prepare the pudding topping. Combine vanilla pudding, 1 1/2 cups eggnog and rum, cinnamon and nutmeg. Mix until pudding is dissolved. Do not allow pudding the get firm. Pour the pudding over top of the cake and then put it in the refrigerator. The pudding will soak into cake and get firm while refrigerating. Allow 10-15 minutes.
  8. Prepare the whipped cream by placing the bowl and whisk in the freezer for 10 minutes until completely cold. Whip heavy cream on medium high speed for several minutes until soft peaks form. Add the powdered sugar and beat on medium high until stiff peaks form. Top cake with whipped cream and dust with nutmeg. Keep refrigerated.

Notes

  • Alcohol free option: Wherever this recipe calls for rum, simply substitute it with more eggnog.

FAQs

Why is my poke cake soggy? ›

Make sure the holes aren't too close together or too far apart—if they're too close together, your cake could be too moist; if they're too far apart, there may not be enough filling throughout the cake.

What's the best way to poke holes in a cake? ›

A clean wooden spoon handle is the best tool and gives you nice big holes to fill with liquid gelatin, but in a pinch a chopstick or even a fork could work. Holes about 1½ inches apart in a grid pattern are ideal, but poke cakes are forgiving; it'll be delicious regardless of the spacing.

Why is it called poke cake? ›

Both cakes called for hole-poking action long before the 1970s. Even though Jell-O isn't quite the potluck-table staple it once was, there are still plenty of home bakers poking holes in their cakes and filling them with sugary semi-liquids.

How do you fix a soggy cake? ›

Adjusting the cooking time and temperature

Everyone's oven is different and you'll get to know the quirks of your own as you use it to bake more and more. If your cake has a soggy middle, the first thing to try is bringing the temperature down a little and baking for slightly longer.

What makes a cake more tender? ›

Buttermilk is an acidic ingredient, which helps break down the gluten in your baking and creates a more tender cake.

Do you let a cake cool before poking holes in a cake? ›

It's best to make the holes in the cake while it is still slightly warm, because as it cools the crust on top of the cake will crumble more easily.

Can you take a poke cake out of the pan? ›

Let cakes cool for 15 minutes. Remove from pans and cool for an additional 15 minutes. Place them back in the pan so that you can pour the jello over the top. Take a fork and poke wholes all around the cake.

How long is poke cake good for in the fridge? ›

Store the Jell-O poke cake, tightly covered with storage wrap or foil, in the refrigerator for up to three days.

What is the most popular style of poke? ›

The most traditional version is the fish poke bowl, typically made with raw, marinated fish. The two most common fish poke bowls are the tuna poke bowl, made with sushi-grade yellowfin tuna, and the salmon poke bowl.

Why is it called Elvis Presley cake? ›

Before it's served, you'll add a layer of cream cheese frosting and sprinkle candied pecans on top for some crunch. Internet lore would have you believe this pineapple-topped concoction was Elvis Presley's favorite cake, that he even asked his grandmother to make it for him as a kid.

Why is poke so delicious? ›

When done right, with cubed chunks of fresh sashimi-grade tuna, ahi poke (pronounced poh-kay, not poh-kee) is kiss-from-da-ocean fresh, giving the dish a clean, bright taste. The raw tuna is seasoned with ingredients such as soy sauce, sesame oil, scallions and chili peppers.

What is the cause of soggy wet cakes? ›

A cake that's wet in the middle, in most cases, has not baked long enough. Put it back in the oven for 10 to 15 minutes. Be sure to check every 5 minutes with the toothpick test for any changes. If sliced, cover with aluminum foil to prevent the top from browning even more.

Why did my cake have a soggy bottom? ›

Most common reason is when the oven door is opened too soon and the cake hasn't set up and baked properly. The mixture could be too soft due to not enough ingredients or if there is too much liquid added. Using too much raising agents can make the cake rise too much too quickly and it implodes on itself.

How can you prevent the soggy bottom of the cake? ›

Blind-bake your base before adding a filling to help to firm the base and avoid liquid being absorbed into it. Prick the base with a fork to help steam escape, cover with foil or parchment, and weigh it down with ceramic baking beans, uncooked rice or white sugar. Then bake at 220°C (425°F) for 15 minutes.

Why does my cake feel wet on top? ›

Sticky cake and cupcake tops are from a reaction with sugar and water. Sugars are hygroscopic, meaning they attract water. Within baked goods, sugars help maintain a moist and tender crumb. Sugar on the exposed tops, however, will grab water from humid air, creating a wet or sticky top.
