HEALTHY RED POTATO SALAD

I love a good potato salad. But most potato salads are full of fat and drowning in mayonnaise. I have several relatives who can’t eat potato salad because the mayonnaise upsets their stomachs.

So, I was excited to find this recipe on Side Delights’ HUGE recipe database for a healthy red potato salad. It’s the perfect blend of classic and healthy to please every single person at our extended family barbecues.

The mayonnaise is swapped for nonfat yogurt. I used my favorite nonfat Greek yogurt for extra creaminess. But the potato salad dressing is still flavorful thanks to yellow mustard, dill pickle juice, red onion, celery, and parsley. And, of course, some salt and pepper.

I also added some boiled eggs to the recipe because in our family it’s not a classic potato salad unless it has boiled eggs. Feel free to skip them if you want a red potato salad with no egg.

In addition to the lightened-up dressing, there is added nutrition thanks to the peels of the red potatoes.

Potato peels are packed with iron. While a whole potato can give you 1/4 of your daily iron, 88 percent of that iron is from the potato skin. The potato skins also contain fiber and protein, along with a variety of vitamins and nutrients.

MAKING RED POTATO SALAD EASY

I was so excited to learn about Side Delights’ Steamables. They have triple washed potatoes sealed in a bag, so you can simply steam them in the microwave. It’s a great trick for quickly cooking potatoes for an easy side.

But the Steamables are also perfect for quickly cooking potatoes to make potato salad, mashed potatoes, or any other dish that needs the potatoes pre-cooked.

I love that I can gather my ingredients and get everything chopped while the potatoes are steaming in the microwave.

Red Potato Salad Recipe (4)

The potatoes come out perfectly fork tender. But because the potatoes were steamed, they are not water logged as can happen with the traditional boiling method.

I timed myself making the recipe. I had pre-boiled eggs from the grocery store, so my only cooking was steaming the potatoes. From the moment I pressed start on the microwave, to when I had everything mixed together and ready to refrigerate, prep time was just 20 minutes!

That means you can quickly throw this red potato salad together the night before. Or whip it up it an hour before your potluck, and refrigerate it for a short time before you leave.

You can definitely serve the potato salad right after you mix it together, but the flavors are much more developed after at least an hour in the fridge.

HOW LONG TO BOIL RED POTATOES FOR POTATO SALAD?

FAQs

What kind of potatoes are best for potato salad? ›

Pick the Best Potatoes for Your Potato Salad

To keep your salad from falling apart into mush, it's important to use the best potatoes for potato salad. Skip the russet potatoes and use a waxy variety instead, like Yukon gold, red potatoes or fingerlings.

How long will homemade potato salad last in the refrigerator? ›

According to StillTasty.com, prepared potato salad—whether homemade or store-bought, dressed with vinegar and oil or mayonnaise—will stay fresh in the refrigerator for up to five days if stored properly.

How to keep potatoes from falling apart when making potato salad? ›

Texture: Allowing the potatoes to cool helps them firm up slightly, preventing them from becoming too mushy or breaking apart when you mix them with other ingredients. Flavor Absorption: As the potatoes cool, they have the opportunity to absorb some of the flavors from the dressing or other ingredients in the salad.

Why don't you peel potatoes for potato salad? ›

There's no reason at all, so my advice is to leave the skins on. The skin on a potato adds a nice texture and flavor to the potato salad and it's also the healthiest part.

Should I cut potatoes before boiling for potato salad? ›

Drop a whole russet into the pot and by the time the outside has cooked through, the inside will still be raw. Larger potatoes should be cubed to ensure they cook evenly (peeled first if desired). Smaller potatoes tend to have thin skins and can be boiled whole, no peeling required.

Can I eat 7 day old potato salad? ›

Just like regular potato salad you have up to five days to consume it, if stored properly. Is it safe to eat week-old potato salad? The USDA doesn't recommend consuming potato salad that's more than five days old.

Can I freeze potato salad for later use? ›

It's important to note that it won't hurt potato salad if you freeze it; there are no food safety concerns here. It will last about three to six months, so you could freeze potato salad, thaw it, and eat it without getting sick -- other than from the taste and texture, that is.

Can you eat 4 day old potato salad? ›

Be extra careful with mayo-based foods, such as chicken salad or potato salad. They're only safe to eat for 3 to 4 days after they're prepared.

Should potatoes be cool before adding mayonnaise? ›

If you are using a mayo- or cream-based dressing for your salad, it's important to wait for the potatoes to cool before you start dressing them.

Should you salt the water when boiling potatoes for potato salad? ›

Forgetting To Salt The Water

Just as you would with pasta, seasoning the water is the only way to flavor the potatoes themselves. The vegetable absorbs the water it's cooked in, so if you just boil them in unseasoned water, you'll end up with tasteless taters that no amount of mayo, herbs, or bacon bits can help.

How long do you boil potatoes for? ›

The cooking time is going to come down to size — whether your potatoes are small or large, and cubed or whole. In general small or cubed potatoes will take about 10 to 15 minutes to boil, while larger, whole potatoes will take between 20 to 25 minutes. To check potatoes for doneness, insert a knife into one.

Is it better to boil potatoes whole or cut up for potato salad? ›

Starchy potatoes should be cooked whole with the skin on, then peeled and cut after they're cooked. Select medium Russet potatoes, not large ones, to ensure the skin doesn't split while cooking. Peel them when they're hot (wearing disposable gloves to protect your hands from the heat), then cut them into cubes.

Should I boil potatoes whole or cut? ›

Some people prefer to boil their potatoes whole, while others prefer to cut the vegetables into pieces before boiling. Smaller potatoes (like red gold) will cook faster whole — about 15-20 minutes in boiling water. Larger potatoes (like russet) take a little more time — about 20-30 minutes.

Should I cover potatoes when boiling? ›

In a large pot, add potatoes, 1 tablespoon salt, and cold water to cover by 1 inch. Bring to a boil, reduce heat to medium, and cook uncovered until potatoes are tender and can easily be pierced by a knife, about 10 to 15 minutes (20 to 25 minutes for larger potatoes).

What type of potato is an all-purpose type that is frequently used in potato salads and soups? ›

Waxy potatoes have a smoother, waxy texture and hold their shape while cooking. They work well in soups, stews, potato salad and scalloped potatoes. Waxy potatoes stand up to boiling, slicing and roasting where starchy potatoes may fall apart.

Are yellow potatoes the same as Yukon gold? ›

The bottom line: Potato labels refer to the color of a potatoes' flesh; potatoes labeled “gold” or “yellow” are not Yukon Gold potatoes, but they can be used in place of Yukon Gold potatoes in recipes.

What are the best potatoes that don't fall apart? ›

Waxy potatoes will hold their shape when boiled—and dressed with a ton of cheese and pepper. This makes waxy varieties the best choice for dishes where you want the potatoes to maintain their shape: Think potato salad, gratin, smashed crispy potatoes, cacio e pepe potatoes, or a tray of salt-roasted spuds.
