This Keto Mexican Taco Cauliflower Rice Stir-Fry is easy and quick which means you’ll have a delicious meal on the table in less than 30 minutes.

Loaded with ground beef, taco seasoning spices, broth and fresh vegetables then cooked to perfection you’ll add it to your meal plan over and over again.

I’m a HUGE fan of Mexican food mainly because I love to use spices as you’ve probably noticed over the years. I may be biased but this is the best cauliflower rice recipe that I’ve ever made before.

When I was living in the UK I had a spice pantry just as abundant as the one we have in Canada and I used it every day.

One of my favourite recipes was Mexican Beef and Pita Chips baked in the oven loaded with sour-cream and cheddar cheese. It’s to die for!

Now that we are living the Keto lifestyle we’ve been working on creating healthy low-carb, gluten-free meals that keep us filled up so we aren’t looking for unhealthy snacks in between meals.

What I love about this Taco Cauliflower Rice Stir-Fry is that you can switch up the mince that you use.

So, today you might follow my recipe using minced beef but the next time you can use ground lamb, ground chicken, ground turkey and so on.

It’s a great way to switch up the recipe along with adding a different variety of keto vegetables such as ;

This is one of those cauliflower rice stir-fry recipes that you’ll want to try and use different variations so you don’t get bored eating the same one over and over. Although, if you’re like me you don’t mind cooking recipes that you love multiple times a month.

As far as I’m concerned all vegetables are healthy for you in moderation and based on the diet lifestyle you are leading.

Cauliflower is super healthy and loaded with nutrients which makes it perfect for the keto diet since it contains 3 grams of fiber per cup.

Where can you buy cauliflower rice?

You can buy a whole cauliflower at just about every grocery store in Canada although it can get pricey at times.

Can cauliflower be frozen?

Yes you can freeze cauliflower so if you find a deal on fresh cauliflower you can rice it or chop it into florets and freeze it up to 3 months.

We’ve found cauliflower rice at Loblaws stores in the vegetable refrigeration unit located in the produce section and at Costco although it’s hit or miss there. You may find the florets far more than you do the cauliflower rice.

How do you prepare cauliflower rice?

Cooking cauliflower rice is fairly easy since the florets are pulsed into small crumbles however it depends on the method you use.

Whether you like your cauliflower rice stir-fry with a bit of crunch or not the cooking time will vary so be sure to test it as you cook it.

Adding fats such as butter or extra-virgin olive oil, bacon fat, avocado oil or even coconut oil along with a broth is a great way to add flavour and speed up the cooking process.

If you don’t want to add any protein or vegetables simply stir-fry in a fat and broth then season with salt and you’ve got fried cauliflower rice.

Fried cauliflower rice makes a great side-dish for lunch or dinner and one that we make often.

We’ve had cauliflower rice stir-fry sans mince with fried eggs and a side of sauteed spinach or rapini. It’s so good.

How to make Mexican Taco Cauliflower Rice Stir-Fry

In 30 minutes you will have Mexican Taco Cauliflower Rice Stir-Fry ready to eat provided you have your ground beef or whichever mince you are using, defrosted.

I suggest taking it out the night before if you have it in the freezer and defrosting it in the refrigerator.

If you have a whole cauliflower you can add it to your food processor and pulse it until it becomes similar to rice or crumbles.

Perhaps you don’t have a processor or you aren’t in the mood to crumble it then you can chop the florets small like we did for our Mexican Taco Cauliflower Rice Stir-Fry.

For this recipe we used Organika Beef Bone Broth which we simply add water too but if you don’t have it then you can use bouillon cubes, boxed broth, canned broth or make homemade bone broth.

They all work equally as well but the nutrient factor will obviously change.

You can eat the mixture above on it’s own or add sour cream, shredded cheddar or your favourite hot sauce on top like we did.

I think it’s a must but it depends on your personal food tastes. Actually, if I had some pork rinds I could load this mixture on top add shredded cheese and bake them.

Homemade Taco Seasoning (You can use this instead of the spices in my recipe) add 2-3 tablespoons

This Mexican Taco Cauliflower Rice Stir-Fry is delicious and perfect when you want that one bowl meal made in 30 minutes or less.

Ingredients

  • 1lb ground beef
  • 1 cup beef bone broth
  • 1/2 cup sliced green manzanilla olives (optional)
  • 1/2 cauliflower riced or chopped (265 grams) 1/2 pound
  • 1 tbsp tomato paste
  • 1/2 cup extra virgin olive oil
  • 1 tsp pink Himalayan salt
  • 1 tsp fresh ground black pepper
  • 1 chopped spring onion
  • 1 medium tomato chopped
  • 1 cup salsa
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 2 bay leafs
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp oregano

Instructions

  1. In a large skillet brown your minced beef, drain and set aside.
  2. In the same frying pan add your broth, tomato paste, lemon juice, olives, salsa, bay leaf, paprika, cumin, chili powder, onion powder and oregano, pink Himalayan salt and pepper.
  3. In another skillet add your olive oil and garlic then your spring onion and cauliflower rice then stir-fry until tender or the consistency you prefer about 10 minutes.
  4. Add the cooked beef to the cooked cauliflower and stir then add your liquid mixture.(remove bay leaf) then serve.
  5. Cook for 5-7 minutes until the liquid has soaked into the beef and cauliflower.
  6. Add Pico de Gallo, shredded cheese,sour cream, Greek Yogurt, Hot Sauce on top as optional extras

Sometimes all you want to do when you get home from work is relax and putting a delicious low-carb keto meal on the table in 30 minutes is a dream come true.
